Soups and Chilis Chicken Noodle Soup--Just like Grandma used to make. Pieces of chicken, carrots, celery, and lots of egg noodles in a rich chicken broth. Vegetable Beef Soup---This is not your mother’s can of Campbell’s. Lots of veggies--tomatoes, potatoes, celery, carrots, corn, green beans, lima beans, and peas--with chunks of beef and tiny pasta in beef broth. Thai Shrimp Soup--If you like Thai food, you’ll love this soup. Shrimp, green beans, and fresh basil in a broth flavored with red curry and coconut milk. A bit spicy. Bean and Tortilla Soup--Kidney beans and vegetables in a tomato-based stock with fried corn tortilla strips for crunch. Lentil and Brown Rice Soup--Lentils and brown rice with assorted vegetables and Italian seasonings (can be made with chicken or vegetable broth). Garbanzo Bean Soup--Garbanzo beans and pasta in a thyme- and garlic-scented beef stock. Italian Garbanzo and Pasta Soup--Garbanzo beans, pasta, carrots, and celery in a spicy chicken broth. Curried Lentil Soup--Not hot and spicy, but strongly flavored. Lentils and vegetables with lots of curry. Italian Lentil Soup--Lentils, carrots, celery, and cabbage in a tomato-based broth with Italian spices. Lentil and Macaroni Soup--As tasty as it is beautiful. A blend of lentils, pasta, fresh spinach, tomatoes, carrots, and basil in a vegetable broth. Vegetable Orzo Soup--Peas, carrots, corn, navy, and lima beans in a rich chicken broth flavored with balsamic vinegar and studded with orzo. Peasant Vegetable Soup--Peas, carrots, celery, onions, and potatoes simmered with dill and parsley for a simple, traditional soup. My Favorite Lentil Soup--Sounds simple-lentils, carrots, tomatoes, and spices in a chicken stock-but this homely soup is one of my all-time favorites. Minestrone--A classic. Red and white beans, carrots, celery, onions, garlic, basil, fresh parsley, and pasta in a tomatoey stock. Split Pea and Lentil Soup--Another homestyle favorite. Lentils, split peas, carrots, celery, diced red pepper, and onion in a rich chicken broth accented with cumin. Tomato Tortellini Soup--Like a bowl of summer in the middle of winter. Cheese tortellini suspended in a bright broth of tomatoes, green peppers, celery, zucchini, and fresh basil and parsley. Chili--Ground beef with beans in a rich tomato sauce. Request yours mild, medium, or hot, with kidney beans or a variety. Can be made with ground turkey or vegetarian. White Chicken Chili--Chunks of chicken, white beans, and green chilies in a mild sauce. Thai Chicken and Rice Soup--Another soup for Thai food lovers. Boneless chicken breast pieces, snow peas, and jasmine rice in a chicken broth flavored with coconut milk, ginger, cilantro, lime, coriander, and green curry. Asian Pork and Noodle Soup--Pork tenderloin chunks, shiitake mushrooms, soba noodles, and water chestnuts in a beef broth flavored with cinnamon and ginger. Pasta E Faglioi--The traditional Italian pasta and bean soup. Shell pasta, beans, celery, and tomatoes in a vegetable broth with Italian seasonings. Chunky Potato Soup w/Ham--A bowl of this hearty soup can chase away the chills on a cold day. Chunks of potato, ham, and onions in a creamy base with a touch of cheddar. Tuna-Cheddar Chowder--A golden bowl of tuna, cheddar cheese, carrots, and onion in a base of milk and chicken broth accented with celery seed.
Casseroles Homemade Beefaroni--Better than Chef Boy-Ar-dee. Ground beef and elbow macaroni in a mildly spiced tomato sauce. Can be made with ground turkey and different shapes of pasta. Chicken, Rice, and Cheese Casserole--A family favorite. Boned chicken, cheddar cheese, and rice slow-cooked in a rich chicken broth. Chicken Cacciatore Casserole--Chicken cacciatore without the bones. Pieces of chicken, green pepper, and pasta in a chunky tomato sauce topped with mozzarella. Cheesy Rotini--Rotini pasta in marinara sauce with ground beef or turkey and fresh green pepper, topped with lots of cheddar cheese. Macaroni and Cheese--You'll never open another blue box. Elbow macaroni in a sharp cheddar cheese sauce topped with bread crumbs and shredded cheddar. Baked Shrimp and Red Rice--Shrimp and rice baked in a chunky tomato sauce with green pepper and garlic. Cassoulet--A hearty mixture of white beans, ham, sausage, wine, and seasonings. Lentil Cassoulet--A meatless alternative to traditional cassoulet, this savory casserole contains lentils, tomatoes, carrots, celery, wine, and spices slow-cooked in a rich broth. Shrimp and Noodle Bake--Egg noodles in a parmesan white sauce with shrimp and dill, topped with french fried onions. Chicken and Noodle Bake--The same, with chicken and tarragon instead of shrimp and dill. Blue Plate Tuna Casserole--No canned soup in this one. Egg noodles, celery, peas, and tuna in a homemade white sauce with parmesan cheese topped with crushed Ritz crackers. Baked Spaghetti--The traditional favorite in casserole form. Spaghetti in a creamy ricotta cheese sauce topped with mozzarella and marinara sauce. Baked Rigatoni with Ham and Cheese--Rigatoni pasta in a cheesy white sauce with chunks of ham and peas, topped with more swiss cheese. Couscous Casserole--A spicy, satisfying blend of couscous, black beans, water chestnuts, corn, red peppers, onions, and jalapeno flavored with cumin and balsamico. Cheese Lasagne--The traditional favorite. Layers of noodles, marinara sauce, and three kinds of cheese. Corn Lasagne--Sounds kooky, but it works! Lasagne noodles, three kinds of cheese, marinara sauce, and corn. Get your veggies in your lasagne. Mexican Pasta Bake--In the dictionary under “cheesy,” there should be a picture of this casserole. Bowtie pasta baked in a cheesy sauce with onions, red pepper, black olives, and Mexican spices. Cincinnati Chili--A classic from the Midwest, this fragrant chili with a touch of cinnamon and other spices (no beans) is slowly simmered to a sauce-like consistency and served over spaghetti. Mozzarella Macaroni Bake--Kind of a grown-up mac-n-cheese. Pasta and broccoli florets baked in a mozzarella-parmesan sauce topped with even more cheese.
